Tuna Aubergine Boats

Want a simple and delicious low-calorie dinner?

Aubergines are so versatile. Here's one way you can make a dinner for two with just a few basic ingredients.

 

Serves 2

INGREDIENTS:

  • 2 aubergines

  • 1 can of tuna

  • 3 light laughing cow cheese triangles

  • 4 bay leaves (optional)

  • 1 onion, diced

  • 1 tsp of garlic paste

  • ½ tsp of curry powder

  • salt & pepper

  • spray oil

 

METHOD:

  1. Preheat the oven to gas mark 4 whilst you fry the onion and garlic paste together in a large frying pan with some spray oil on a low heat.

  2. Cut the aubergines in half, removing the flesh and dice it up. Add the diced aubergine to the pan after a few minutes and cook for 3-5 minutes.

  3. Drain a can of tuna and add it to the pan, along with the curry powder, salt & pepper. Fry together for a further few minutes before mixing in the cheese triangles.

  4. Scoop the cooked mixture evenly into the 4 halves of the aubergines, add the bay leaf and place into a baking tray with a splash of water in the base. Cook for 30mins before covering with tin foil and cooking for another 30mins.
